With a project of this size, you might want to hire each contractor to do a smaller project, such as a bathroom remodel. Small job, small commitment, you get to see their work and work with them to find out if you're compatible with the contractor.
As good as this sounds, I'll lay odds that this contractor ends up being more expensive in the long run. The reason being is that it's hard to foresee problems with the structure or the overall job that will require further attention. To stay within that 10%, the overall price will be higher.
For example, one will do this (very detailed) and commit to being within 10% of final but it costs $1,700. $700 of which goes to project if we choose them.
