Heat shields can be made from just about any non-combustible material and should be spaced a minimum 2" from the finished wall face for good air flow. Typically these are of a tile or masonry composition, though I've seen metal with heat/fire proof insulation backers as well.
It is important that you follow your local code regulations. Contact your building department for details materials, thicknesses, and set-back allowances. Contact local wood stove retailers for what types of units they are installing with their stoves. From there, you can easily build your own heat shield.
