Default vapor barrier on dirt basement

I have a house that is a major redo & over 100 years old. Part basement under central part of house, part dirt under the rest. Can I put plastic on the bare earth and partially seal off (with access) the dirt part? Would I need to put plastic on the underside of 1st floor joists to protect or some type on insulation?
Thanks in advance for any info.

Here's what I did. Heavy duty plastic on the ground and insulation between the joists.
You still have some air flow that way to help keep the joists dry.
