I would want to see 3/4" plywood sub-floor for this installation.
That sounds like a good starting place for the removal. Actual removal is going to depend on the type of installation. Some laminate flooring is snap together and lifting one side you can unsnap it and salvage all the flooring. If it is glued together the easiest way may be to set up a circular saw so the depth of cut is just slightly deeper than the thickness of the flooring and cut th flooring into sections for removal.
