It will depend on how the doors are done whether they can be easily changed, but yes, you can change them.
Most of the interior French doors I've seen are merely two identical doors with a slide bolt holding the "fixed" door shut. Swap the door that the slide bolt and operating handset are on and your done.
Some French doors have a "T" molding on the fixed side that the operating door closes into. This would need to be removed and switched to the other door, along with the handset and locking mechanism that keeps the fixed door closed.
The first scenario will be easy, the second definitely doable, but not as easy.
