Default Convert Enclosed Porch to Outdoor Haven

I have an enclosed back porch that hasn't been touched since it was built in 1875. I removed the windows, doors, and frames, but I'm not sure how to proceed. I have 5 thin beams from where the windows used to be. I'd like to get rid of 3 of these beams, but I'm unsure if doing so would be dangerous. I'm unsure how much support they provide to the roof. It doesn't look like much. I have before and after pictures below (not in that order). I also want to remove the porch ledge from the the top of the steps up to where the windows used to be and install clean, white porch posts and a railing. I'm not sure how to remove this existing framework. Any ideas?
