The only thing you'll be able to do is to float it smooth with drywall compound and then either leave it be or retexture with a texture you prefer.
You are correct, texture is used to hide less than perfect taping/mudding of joints and fasteners, and when it's used to cover a bad job, it tends to be extremely thick and heavy, which is an unattractive texture indeed. When walls are properly taped and filled, then it only takes an ever so slight texture to hide minor imperfections from the eye.
I suffer from CDO ... Its like OCD, but in alphabetical order, LIKE IT SHOULD BE!!!
