Default Kitchen Cabinet gap with wall

I had my old thick backsplash removed and I want to just paint the sheetrock. But now it appears that the bottom of the last two upper cabinets have a large 1 - 2 inch gap between them and the walls. My husband says it looks like the WALL is off alignment about two inches, and whoever installed the kitchen cabinets put thick wood strips behind the cabinets so they are even with the others. The cabinets look even with the other ones, but how do I cover this gap?

You can either cut a piece of wood the size of the gap and slip it in there to fill it, or place the wood as if it were trim on the outside to cover it.
